Obligation to expel kitchen air outside the building
In Italy, the obligation to expel kitchen air outside the building is provided for by DPR 412/1993, amended by D.Lgs n. 102 of 2014.
Article 5, paragraph 7, of DPR 412/1993, states that "The stale air produced by kitchens, bathrooms, laundries, service rooms, and the like must be evacuated outside the building".
This obligation is valid for all buildings, both residential and non-residential.
Kitchen stale air can contain substances harmful to health, such as carbon monoxide, fumes, and odors. For this reason, it is important that it is evacuated outside the building to avoid the accumulation of these substances inside the environment.
Kitchen air can be expelled outside the building through a chimney or flue. Alternatively, it is possible to use an extraction system with an extractor hood.
In case of installation of an extraction system with an extractor hood, it is necessary to comply with the following requirements:
- The hood must be installed to ensure proper extraction of stale air.
- The exhaust duct of the hood must be made of non-combustible material and must have a section not less than 150 cm².
- The exhaust duct of the hood must be installed to prevent water infiltration.
