ARTURO is the modular air purifier for professional kitchens that combines mechanical pre-filtration, dual electrostatic filtration and activated carbon to treat grease mist and reduce odor nuisance.
Designed according to UNI EN 16282-8 standards and with filters classified UNI EN ISO 16890, it supports parallel architectures with increments of 1,500 m³/h.
The initial pressure drop per channel at 2,700 m³/h is ≈ 490 Pa (clean filters); the results on odors are measurable with UNI EN 13725 and, when required, managed in compliance with art. 272-bis of Legislative Decree 152/2006 and MASE Guidelines 2023.

Premise

A standalone activated carbon filter cannot guarantee the correct operation of a ductless extraction system. This is a critical point: activated carbon is just one stage of air treatment and is not a substitute for a complete fume abatement system.
The "Arturo" ductless purifier is not a simple product, but an integrated air treatment system. Each unit combines multiple filtration and oxidation stages, working together to abate fumes, grease, odors, and fine particulate, ensuring measurable and stable results.
Therefore, prior to installation, all variables must be assessed: cooking types, air volumes, thermal power, room size, and—crucially—legal requirements. Only proper design and sizing ensure compliance with standards set by Health Authorities, Municipalities, and European regulations.

To install a professional kitchen in a premises without a flue or chimney, it is necessary to obtain a specific authorisation from the Local Health Authority (AUSL/ASL). This authorisation functions as an exemption and is granted only if the facility complies with the required technical, environmental, and sanitary standards established by current regulations.
Commercial kitchens using electric cooking equipment do not require a chimney because they do not generate combustion fumes. However, cooking processes still produce greasy vapours, oily aerosols, fine particulate matter, volatile organic compounds (VOCs), and strong odours, which must be treated with certified ventilation systems compliant with European and Italian technical standards.
The primary technical standard for ventilation and air treatment in professional kitchens is UNI EN 16282 (complete series), specifically dedicated to capture systems, filtration, extraction units, and treatment technologies for cooking emissions. This standard defines the minimum requirements for the removal of grease, particulates, and airborne contaminants through multi-stage mechanical filters, electrostatic precipitators, activated carbon, and other certified purification technologies.
Additional standards relevant to indoor air quality and ventilation include:
UNI EN 16798-1 – indoor air quality and environmental comfort;
UNI EN 16798-3 – design requirements for ventilation systems in non-residential buildings;
UNI 10339 – principles for ventilation and air handling in work environments.
For emissions to the outside environment, regulations fall under Legislative Decree 152/2006, the Italian Environmental Code, which governs air protection, including discharges through wall vents and the obligation to prevent nuisance odours, vapours, and polluting substances. Any outdoor emission is subject to verification by ARPA, the Regional Environmental Protection Agency, which checks compliance with regional and municipal environmental limits.
Regarding occupational health, Legislative Decree 81/2008 requires adequate ventilation systems capable of preventing the accumulation of harmful substances, ensuring sufficient air exchange rates and overall indoor air quality in accordance with applicable UNI standards.
To obtain the exemption, the AUSL must verify that:
The air treatment systems are effective and suitable for removing odours, vapours and particulate matter.
The equipment complies with UNI EN 16282 and UNI EN 16798 standards for professional kitchen ventilation.
Emissions are reduced to levels consistent with Legislative Decree 152/2006 and local environmental regulations.
Detailed technical documentation is provided demonstrating the effectiveness of the adopted filtration technologies.
Other authorities involved in the approval process include:
Municipality / SUAP (Single Desk for Productive Activities) for licences and SCIA submissions;
Technical Office / Building Department for structural and building compliance;
ARPA for environmental emission assessments;
Fire Brigade Authorities, when required, for safety and fire-prevention validation.
Only after all requirements are met can the AUSL and the Municipality grant authorisation for operating an electric professional kitchen without a flue.

The treated air must be obligatorily expelled outside (for volumes of a certain importance) and kitchen areas must have air exchange in accordance with the law, the healthiness of the premises themselves according to the standard together with UNI 15251."
For this reason, it is advisable for the customer who contacts us to provide a layout of the area to be treated or, in the absence of a layout, a rough hand-drawn sketch as a preliminary step.

Inside the Arturo system, ozone is generated in a closed circuit, calibrated to react with pollutants. It never exits into the environment, because it is fully neutralized by the downstream activated carbon. It is not a deodorizer: it is a powerful chemical agent that breaks molecular bonds and transforms odors into harmless molecules.
These filters do not capture by weight but by electrical charge. They identify and trap particles smaller than 1 micron, such as ash, combustion fumes, carbon residues, and oily mists. They are washable and reusable, with abatement efficiencies far superior to mechanical filters.
